RECIPE FOR CAKE FOR A SPECIAL PERSON (ALL-IN-ONE SPONGE 1 LAYER)

50g (2oz) self-raising flour, sifted

1/2 teaspoon baking powder

50g (2oz) soft margarine

50g (2oz) caster sugar

1 large egg

Buttercream

25g soft margarine

50g icing sugar

a few drops of vanilla essence

Colouring if required.

Decorations for top

Can be decorated with more butter icing, handmade or bought decorations.

1 x 15cm sponge tin (approximate size), lightly greased

Pre-heat oven to Electricity 170C (325F) Gas Mark 3

Method

Take a large mixing bowl and sift flour and baking powder into it.

Add all the other ingredients to the bowl and beat with an electric mixer until blended and smooth.

If the mixture does not drop off a wooden spoon easily when tapped on the side of the bowl, then add 1 or 2 teaspoons of water and beat again.

Pour the mixture into prepared tin, level off and bake on the centre shelf of the oven for about 30 minutes.  When cooked leave in the tin for about 30 seconds, then loosen the edges by sliding a palette knife all round

Turn it out onto a wire cooling rack.

When cool spread the buttercream on top of the cake, which then can be decorated with more buttercream, handmade or bought decorations.

Children’s Exhibits should show AGE of the competitor clearly, but paintings etc. should also have the NAME ON THE BACK.

Children can of course enter in the main classes (Sections 1-7), as well as the Children’s Classes.

Please Note GERRANS School will be entering classes 1-4.

All classes are open to children of 16 years or under living in the Roseland (parishes of Gerrans, Philleigh, Ruan Lanihorne, St. Just in Roseland, Veryan and Tregony)
