Take a quantity of courgettes and coarsely grate them and set to one side.
Mix some plain flour, olive oil and a couple of eggs in a bowl (the quantities aren’t a precise science!). Then place the grated courgette burgers into the batter mix and pour out into a pan of hot olive oil. Cook the patties for a couple of minutes each side, turning once, and then eat!
A glass or so of Italian red wine will go down a treat with them.
