Philleigh Way, a new cookery school focusing on the next generation of farmhouse cookery, launched last week. Part of Court Farm in Philleigh on the Roseland Peninsula, the Philleigh Way Cookery School aims to share knowledge and skills handed down through the generations and inspire people to cook creatively with local, seasonal ingredients.

Philleigh Way resident chef and fifth generation at Court Farm, George Pascoe told Roseland Online: “Philleigh Way is all about bringing traditional rustic cookery bang up to date with contemporary ingredients and skills. We want to reconnect people with the best of days gone by – a more simple, slower paced way of life in sync with nature and the seasons.

“We’ll concentrate on cooking creatively with local produce including wild ingredients from our farm such as venison from the woodland, samphire from the riverbanks, or watercress from one of the natural springs. We’ll even provide the opportunity to cook down in our ancient oak woodland by the Fal river.”

Today, people are increasingly concerned with the provenance of the food that they are buying, cooking and eating. However several decades of mass consumerism has meant that many of the old skills and knowledge have been lost and much of the most plentiful local ingredients are being ignored.

George added, “Philleigh Way aims to inspire students of all ages and culinary skills to cook creatively and use their imagination to make delicious, impressive dishes from the produce on their doorstep.”

Founded by brothers-in-law George Pascoe and James Martin, day courses will be from £100 including lunch. Signature fish and bread courses will run through the summer leading into game and other seasonal courses in the Autumn and Winter.

In addition, local guest lecturers will run courses such as bush craft, foraging and flower arranging. Philleigh Way will also be hosting supper clubs, as well as private gourmet dining experiences for groups of up to 14. For more information please visit www.philleighway.co.uk
