19.06.11: The Watchhouse in St Mawes has been revamped by new owner, Will Gould, and is open for business. Although still a ‘work in progress’ for a short time, the restaurant intends to provide good quality food at great prices.
Will told Roseland Online, “I want to produce something between ‘posh dining’ and ‘pub grub’. I think there’s a real gap in the market for that in St Mawes and I intend to provide something for everyone. At present we have an informal lunch menu and slightly more formal evening meals, but in the near future we want to provide breakfasts, too.”
Having started his catering career with the renowned London Company ‘Absolute Taste’, which catered for the McLaren F1 team, amongst others, as executive chef for 8 years, Will was uneasy about taking the plunge to move to his beloved Cornwall as he usually commits to what he does. But the opportunity of the Watchhouse was just too much of a lure.
“I sailed here as a boy and have fond memories of my time,” will told us, “so when this opportunity arose, I made the decision and me and my fiancé made the move. We aim to support local suppliers and fishmongers where possible at the restaurant, which is harder to source but possible, and our laid back, walk-in welcome will be bestowed on everyone.”
Will’s specialities will be good quality pasta dishes like his crab spaghetti and seasonal dishes like chunky salads made from the local ingredients. Crab tarts, prawns and seafood dishes and fresh fishcakes using many of the more sustainable fish and seafood on offer in the area will be prevalent, too.
“We’re also looking for good service staff, so if anyone thinks they fit the bill, please do contact us,” he added. “The website is in the process of being created, but a sample menu is already live if you want to check that out.”
